HISTORY
From this easy dish, also called potatoes omelette, the first known document that is mentioned is called “memorial de la ratonera", an anonymous document addressed to the Navarra´s courts in 1817, in this is shown how all the farmers of the region lived in misery, and in this document there is a quote, which is:

"...two or three eggs in an omelette for five or six, because our women know how to do big and fat with a few eggs mixing potatoes, bread atapurres or otherwise...”

Also, there is a legend about a man called Empero, he invented the potatoes omelette or Spanish omelette as a simple, fast and nutritive dish with which he can satisfy the hunger of her army.

SPANISH OMELETTE/ TORTILLA ESPAÑOLA

INGREDIENTS FOR 4 PEOPLE:
6.     5 EGGS
7.     1500 GRAMS OF POTATOES
8.     5 SAUSAGES
9.     SALT AS YOU LIKE / SALT TO TASTE
1.    OLIVE OIL

PREPARATION:

1.     Peel the potatoes and cut into “french fries”, or also cut into médium sized squares.
2.     Fry the pieces of potatoes in hot olive oil until they begin to Browned and untiel they are in soft point.
3.     Cut the sausages in smal pieces (small size) and  fry it in hot olive oil.
4.     After Cooked or fried the potatoes and sausages, mix that into a pan with very little olive oil.
5.     Into a Bowl, pour and beat the eggs adding it salt as you want/salt to taste.
6.      After beaten the eggs pour it, over the mixture of potatoes  and sausages.
7.     Later cook the mixture until browned and  then flip to the correct cooking on both sides.

8.     Finally, you can add to omelette whatever  you want. For example kétchup (tomato sauce), mayonnaise or decorative (ornamental) food whatever you want.

It is recommended to eat the omelette hot, and with a natural refreshment drink.

TIPS AND ADVANTAGES

This recipe is very practical due to its quick and easy preparation from a few simple ingredients, this is one of its best advantages, too, its preparation has a low price and from a moderate amount of ingredients, you get a considerable amount of omelette.
Its fast preparation is one of its most attractive because little time you have a healthy meal and good quality another advantage is its versatility because it can combine with the one you like for example if you are vegetarian you can add: green peppers, onions, rice milk, olive oil and salt.
Or if you like ham and cheese: The slices of ham and cheese are thrown from the mixture of potato and egg.
You can also add garlic: for this make an omelette as described above, but instead throw in the beaten eggs, half a clove of minced garlic, you will see that great taste!
Tips: If you do not want an oily omelette do not abuse of the oil.
If you like mashed potatoes entertain like few crumbs while breaking potato fries.
Ensure that the omelette is cooked in all its parts so its taste be uniform.

  1. Ok, this was a better approach, nonetheless, there's something to consider: 1. you didn't erase the history. 2. Tips and advantages would sound better if you call it: why an omelet?
